For the past few days I have been craving Coconut Chicken that I tried a few weeks back and decided I would cook it again. Here is what it looked like:
For the most part I feed the dogs chicken thighs/drumsticks and didn't want to run short before next grocery day and only grabbed three. While walking back to the cabin I looked at the thighs. Hmmmmm . . . there is NO way that will fill Vaughn up I have to add something else and went back to the freezer. Pulling stuff out again I found a pack of frozen prawns and scallops. YUM! Gotta do it.
I started cooking the chicken thighs in a large skillet to brown the meat, then added onions, garlic and peppers. I let the onions, garlic and peppers cook merrily away sucking up all the chicken fat goodness. Next I added the prawns and scallops and seasoned it with salt, cracked pepper and cayenne, letting them cook until the prawns turned pink. I opened a can of coconut milk and added it, letting it cook until it reduced down to a thick, bubbly yum, about 20 minutes. I put some broccoli on to steam (one of my favorite veggies) and added about 1/2 a jar of Thai Sweet Chili Sauce. Once the broccoli was done I plated it with a generous helping of Jasmine Rice, added the chicken thighs and smothered it in the wonderful sauce of coconut milk, prawns, scallops and Thai Sweet Chili.
